Dijon Salmon

This is my favoite 'go to" recipe.  I found it from the Skinnytaste.com website and I make it now without having to look at the recipe.

Mix:  2 cloves crushed garlic, 1 tbsp Herbs de Provence, 1 tsp red wine vinegar, 1 dash olive oil

Drizzle olive oil in a pan and when hot place salmon skin side down and cook 5 minutes (medium heat).  Flip and take off skin.  Put the dijon mixture on and cook 5 minutes - flip - add dijon mustard and cook 4-5 minutes.  Flip again until mixture is done.  Squeeze some fresh lemon and serve over some brown rice.  LOVE THIS!
